Rosemary Potato Pizza

Rosemary potato pizza is a non-traditional way to create a unique but delicious pie with surprising results.

Ingredients

Directions

    Dough:
     
  1. Put 1 cup warm water in a large bowl.
  2. Add the yeast and 1/2 teaspoon salt.
  3. Mix in 1 cup flour and 1/4 cup olive oil.
  4. Add 2 cups flour and mix until the dough has an even consistancy.
  5. If the dough does not ball up because it is too dry, add water 1 tablespoon at a time until the dough forms a ball. If the dough is sticky, add flour 1 tablespoon at a time until the dough forms a ball. Adding water or flour as needed to get the right consistancy will assure you always get perfect dough. Just remember to add in small amounts.
  6. Once the dough forms a ball, knead on a floured board until smooth and elastic, 3-5 minutes. This builds the gluten which helps the dough to rise and become chewy when cooked.
  7. Form the dough into a ball and place in a plastic grocery bag or a covered, oiled bowl. Put in a warm, dry area to rise.
  8. Let the dough rise until doubled, about 2-3 hours.
  9. The dough is now ready to be made into a pizza!
     
    Pizza:
     
  1. Pre-heat oven to 400 degrees Fahrenheit.
  2. On a floured board or counter, roll the dough into a 15 by 15 inch square or circle.
  3. Place the rolled out dough onto the baking pan.
  4. Pour 2-3 tablespoons olive oil on the dough and spread around until the dough is evenly covered.
  5. Dust the pizza with salt and pepper.
  6. Cut the potatoes into thin slices.
  7. Place the potato slices on the pizza in a circle starting from the outer edge. Place the slices so that 1/4 of each slice overlaps the previous slice so that the it looks like fish scales.
  8. Once you pizza is covered with potato slices, place in the pre-heated oven on a center rack.
  9. Cook for 15 minutes. Do not open oven to check status as this will cool the oven.
  10. While the pizza cooks, chop the anchovies.
  11. After 15 minutes, remove the pizza and sprinkle the anchovies and rosemary on top.
  12. Return the pizza to the oven for 4-6 minutes. Remove the pizza and you're ready to serve!
